New Favorite {Healthy} Treat!

When the hubs & I are craving something sweet, this is our new healthy treat! We are trying to be good & eat healthy.

All you do is mix 1 cup of nonfat plain greek yogurt & 1/2 cup nutella. Easy & absolutely delicious! {Tip: heat up the nutella for about 30 seconds so it's easy to stir} Dip strawberries, bananas or whatever yummy fruit you can think of. This stuff is so good you can just eat it by the spoonful!

Cookies & Cream Cookies!

Seriously HEAVEN in a cookie!
I made these cookies the other night & they are so YUM!!
I used milk chocolate chips (Guittard) instead of semi sweet. Milk chocolate is sooo much better! They are dangerously addicting, so be careful ;)

Paula Deen Pumpkin Gooey Butter Cake


Quite the mouthful huh? :)
This recipe is beyond YUMMY! I made it yesterday for a family party & it was a hit!
It's like a glorified pumpkin pie. And I heart pumpkin pie!
You have to try this delectable recipe!! You know that anything by Paula Deen is going to be good.

*Pumpkin Gooey Butter Cake Recipe*
Ingredients

Cake:
1 18 1/4-ounce package yellow cake mix
1 egg
8 tablespoons butter, melted

Filling:
1 15-ounce can of pumpkin
1 8-ounce package cream cheese, softened
3 eggs
1 teaspoon vanilla
8 tablespoons butter, melted
1 16-ounce box powdered sugar
1 teaspoon cinnamon
1 teaspoon nutmeg

Directions

Preheat oven to 350 degrees.

To make the cake, combine all of the ingredients and mix well. Pat the mixture into a lightly greased 13x9-inch baking pan.

Prepare filling:
In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter and beat together.

Next, add the powdered sugar, cinnamon, nutmeg, and mix well.

Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes. Make sure not to over bake as the center should be a little gooey.

Serve with fresh whipped cream.

Creme Brulee...in the CROCKPOT!

What?!
That's right, I made Creme Brulee in the crockpot!
MMMMMMMMMMM!!!!!




I had everyone guess on fb yesterday what I was making in my crockpot & NO ONE guessed!
Hahaha. I even offered a free goodie if someone could guess :)

I used THIS recipe. I am in love with crockpot cooking. It's so easy & soooo yummy!
I came across the blog A Year of Slow Cooking & instantly fell in love :)
So many yummy & easy recipes. I've tried lots & every one is so good!

{I copied & pasted the recipe below}

Ingredients....

--2 cups heavy cream
--5 egg yolks
--1/2 cup sugar (baker's or fine sugar is better so the granules disappear)
--1 T good vanilla
--1/4 cup raw sugar (for topping, add later)


The Directions:
Find a heat-resistant dish that fits inside of your stoneware insert. Fit it in, and using a cup or pitcher, pour water around the edges so there is water 1/2 - 3/4 of the way up the sides of the dish. Push it down with your hand if it starts to float up. Take the dish back out. If you have separate dessert ramekins, do the same thing after nestling them all inside.


--whip the 5 egg yolks in a medium-sized bowl
--slowly add the cream and baking sugar while mixing
--add the vanilla

Pour mixture into the dish and carefully lower into the stoneware without sloshing water into the dish.

Cover and cook on high for 2-4 hours. If you are using little ramekins, check after an hour; I'm not sure how long they will take. Custard should be set with the center still a bit jiggly. Touch lightly with your finger to check. Unlike an oven, it will be difficult to overcook this. Try not to worry.

I cooked the one above for 4.25 hours on high.

VERY carefully (use oven gloves!) remove dish and let cool completely on counter, then chill in the refrigerator for 2-3 hours.

Sprinkle the 1/4 cup of raw sugar evenly over the top of the custard. Move your oven rack to the top rung and broil for 3-10 minutes, checking often. The sugar will boil and brown.

Cool again in the fridge for a few hours.


*Mine turned out pretty darn tasty. The texture wasn't exactly how I'd like it though. Next time I'll use individual ramekins, I think it will cook better that way.

The BEST Muddy Buddies EVER!

I don't like to brag, but I do make the best Muddy Buddies EVER!
Since I am a nice person, I'm going to share my recipe with you :)
I've tried the recipe on the box, but it is not great....so I made up my own!
It's probably the most addicting treat & a family favorite.

Here's what you need......

only 4 ingredients, sweet!
Rice Chex, Guittard Milk Choc Chips (or Ghiradelli), Crunchy Peanut Butter, Powdered Sugar

In a medium bowl, microwave entire bag of choc chips for 1 minute. Add 1/2 cup peanut butter. Microwave 40 seconds. Stir choc chips & peanut butter. In a large bowl, dump 1/2 box Rice Chex Cereal. Pour choc/pb mixture on top of cereal & stir until completely coated. Spoon chex mixture into a large ziploc bag. Top with 1/2 cup (more or less) powdered sugar. Seal bag & shake away! Pour finished muddy buddies in a bowl & EAT EAT EAT!

Oreo Truffles!

Fact: I have a sweet tooth.
I would rather make treats any day than have to make dinner.
Not a good thing for this figure of mine, but you have to enjoy life a little right?

In my goodie making, I am inspired by recipes...but tweak them to my liking :)
Here is the first of many yummy recipes to come, enjoy!

Oreo Truffles


What you need....
(1) Bag of Oreos
(1) 8 oz package cream cheese (room temp)
(1) bag Guittard milk choc chips
1/2 Tbs. vegetable oil
food processer

Grab your oreos & set 8 cookies aside. Get out the food processor & crush away! In a medium bowl mix oreo crumbs & cream cheese until well blended. Roll oreo mixture into 1 inch balls (makes about 45-50 balls) & place on cookie sheet. Put the oreo balls in the freezer while you prepare the chocolate for dipping.

Heat choc chips in microwave for 1 1/2 minutes. Stir melted choc chips & add 1/2 Tbs. vegetable oil. Grab the oreo balls out of the freezer & cover them in the chocolate using 2 forks. Place the dipped oreo balls on wax paper. After dipping the oreo balls, you can use the 8 leftover oreo cookies to sprinkle crumbs on top of the chocolate. Or it would be yummy to drizzle white chocolate on top. Get creative!

After all your oreo balls are dipped, place in fridge until they harden, then DEVOUR!!
